All five grandkids; Adam, Jeremy, Tyler, Tara and Trevor love this dish and so does Fletcher Foster, senior VP marketing Capitol/Nashville.
4 medium (fist size) sweet potatoes
1/2 stick butter, melted
3/4 cup evaporated milk
1 cup sugar
1 teaspoon vanilla
Pre-heat over to 350°.
Boil potatoes in jackets until fork tender. Peel when cool enough to handle. Add melted butter. Beat with mixer until creamy. Continue beating while adding milk, sugar and vanilla until well blended. Scrape sides of bowl and beat’er once again. Pour into 1 1/2 quart dish. Cover with miniature marshmallows. Place in oven for about 15 minutes or until you smell the marshmallows.
Please note: I have never had a recipe for this. I mix and taste and add, like I do with most everything.
