Okra and Tomatoes
5 or 6 slices bacon (non-smoked)
4 cups okra, sliced about ½ inch (may use frozen)
3 cups chopped tomatoes (canned is OK)
3/4 cups finely chopped onion
2 cloves minced garlic
3/4 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon red pepper
1 tablespoon sugar
Cook bacon until crisp. Crumble and set aside. Add butter and flour to bacon drippings. Heat skillet to medium, stirring until flour turns the color of peanut butter. Add onion, stirring a couple minutes. Add okra and garlic. Cook and stir a couple minutes. Stir in chopped tomatoes, salt, peppers and sugar. Reduce heat to simmer. Cover and cook 20 minutes. Put crumbled bacon over okra and tomatoes in the serving bowl.
