My scalloped potatoes recipe I promised will run next week. Since I made my cheddar burgers on The Ellen DeGeneres Show last week, I figured you wonderful people needed this recipe first.
1 1/4 pound ground chuck or sirloin
1 egg, beaten
1/3 cup fine bread crumbs
Sharp cheddar cheese, grated
Mix meat, egg, bread crumbs and dash of Worcestershire sauce well with your hands. Take an egg-sized ball of meat and work it with your fingers. Then pat it on a piece of wax paper.
Place another piece of wax paper over the meat. Pat down. Roll with a rolling pin until hamburger size. Set aside. Take another egg-sized ball of meat and repeat procedure.
Place cheese in the middle of the first burger. Top with second burger and pinch around the edges, keeping all cheese inside. Place in a hot oiled pan. Sprinkle with salt and pepper. Repeat, making as many burgers as needed.
Slice a big onion and fry in the oil with the burgers. Serve burgers and onions on a warmed roll with mustard on the meat side, mayo on the side of the onion. Add tomato and lettuce.
Ellen loved cheddar burgers and so do I. So will you. It takes a little effort, but it’s worth it. Banjo player Charlie Cushman from White House, Tenn., swears the best meal he ever had was once when he dropped by to visit my sons, and I shared a cheddar burger with him.
