Banana Nut Bread

Soup and bread suits a winter’s night. This is a good banana bread recipe.

1/2 cup oil
1 cup sugar
2 beaten eggs
3 ripe bananas
2 cups all-purpose flour
1/2 teaspoon baking powder
1 teaspoon soda
1/2 teaspoon salt
3 tablespoons milk
1/2 teaspoon each vanilla and almond flavoring
1/2 cup chopped nuts

Preheat oven to 350°. Combine oil and sugar in a mixing bowl. Beat until smooth. Add eggs and bananas and mix well. Sift flour, baking powder, soda and salt in a separate bowl. Add alternately to batter with milk, beating
well after each addition. Stir in pecans. Pour into greased and floured 5 x 9 loaf pan. Bake for 1 hour. Store covered.
