Sweet Potato Pudding

When I was a tyke in North Carolina, farmers sold their tobacco in the fall and their wives got one trip to town. I recall mama, Aunt Minnie, Aunt Annie and Aunt Georgia would go to Belk or J.C. Penney’s in Reidsville to buy a new dress. And one of them would inevitably go to Roses Five & Ten Cent Store to buy a new pudding pan. They’d make sweet potato pudding in the oven of those wood stoves.

4 medium sweet potatoes, grated
2 large eggs, beaten
1 cup sugar
1 cup milk
1 teaspoon vanilla
1 teaspoon nutmeg
1/4 teaspoon salt
3/4 stick butter, melted

Combine grated sweet potatoes, beaten eggs, sugar, milk, vanilla, nutmeg, salt and melted butter in a large bowl. Stir to mix.

Pour in a well buttered “pudding pan” and bake at 400° in a preheated oven for 30 minutes.

Lordy, I can smell the wood stove and taste the warm pudding to this day.
