Chicken Pie

Quick, easy and good!

2 1/2 to 3 lb. chicken (or 4 breasts)
1 can cream of chicken soup
1 cup self-rising flour
1 teaspoon salt
2 cups reserved chicken broth
1 stick melted butter
1 teaspoon black pepper
1 cup buttermilk

Cook chicken until tender. Cool. Remove skin and bones. Reserve broth. Cut chicken in bite-size pieces. Place chicken in 9 X 13 baking dish. Mix broth and chicken soup in a saucepan and bring to a boil. In a mixing bowl, combine melted butter, salt and pepper, flour and buttermilk. Mix thoroughly to form batter. Pour broth/soup over chicken. Spoon batter over top.

In preheated oven (425º), bake for 25 minutes until golden brown.
