Fruit Cocktail Cake

Ruby Davis, guitar player with the bluegrass group, the Season Travelers, and wife of the leader, the great banjo player, Hubert Davis, gave me this recipe. It’s so rich and delicious. Let cake cool before slicing.

2 eggs
2 cups all-purpose flour
2 teaspoons soda
1 3/4 cups sugar
1 15-ounce can fruit cocktail

Preheat oven to 350°. Beat eggs. Mix remaining ingredients. Bake in a 9 x 13 glass dish for 30 minutes.

Topping:
1 3/4 cups evaporated milk (Carnation or Pet)
1 1/2 sticks butter
1 1/2 cups sugar
1 1/2 teaspoons vanilla
1 3 1/2 -ounce can flaked coconut
1 cup chopped nuts

Bring butter, milk and sugar to a slight boil over medium heat. Allow to simmer 3 minutes. Add vanilla, coconut and nuts. Mix well and pour over cake.
