Vidalia Onion Pie

It’s almost Vidalia onion time. Treat your family to a Vidalia onion pie
for supper.

1 cup fine cracker crumbs
1/2 cup butter (room temperature)
3 cups Vidalia onions, thinly sliced
2 eggs, beaten
3/4 cups evaporated milk
3/4 teaspoon salt
Dash pepper
1 1/2 cups Monterey Jack cheese

Preheat over to 350°.

Mix half the softened butter with cracker crumbs and press into the bottom and sides of an eight-inch pie plate. Saute thinly sliced onions in remaining soft butter until soft. Sprinkle half the cheese on the crust. Top with sauted onions. Meanwhile, beat eggs and mix with milk, salt and pepper. Pour in mixture. Add remaining cheese on top. Bake for 30 minutes.
