Today’s mail was on my desk when I sat down to send a recipe, and there was a card from Kenny Chesney’s P.R. person, Holly Gleason, from St. John’s in the U.S. Virgin Islands. I’m not a drinker, but if I were, I’d probably try this recipe on the card.
1 jigger dark rum
1/4 cup heavy cream
1 jigger light rum
splash of triple sec
1 ounce Coco Lopez cream of coconut
1 large ripe banana
Pour into a blender with one cup crushed ice. Blend 60 seconds. Garnish with grated bittersweet chocolate.
I don’t know much about a jigger, but it sounds tasty.
