Hazel's Hot Dish Recipe of the Week


One of life’s great privileges for a parent is making pancakes for children and grandchildren. They have mixes, but this is the best.

2 cups all-purpose flour
2 1/2 teaspoons baking powder
1 teaspoon soda
3/4 teaspoon salt
2 tablespoons sugar
2 large eggs, slightly beaten
2 cups buttermilk
1/4 cup vegetable oil

Combine first five ingredients and stir until well mixed (in a large measuring cup if you have one). In another bowl, whisk eggs, buttermilk and oil. Add to flour mixture, stirring until dry ingredients are moistened. Heat and slightly grease griddle or fry pan. Pour about 1/4 cup batter for each pancake. Watch carefully. When the surface bubbles, it’s time to turn the pancake.

Serve pancakes while hot with maple syrup and butter.
