Fried Green Tomatoes

3 green tomatoes with peel, sliced into 4 slices each
1 1/2 cups self-rising flour
2 large eggs
1 teaspoon pepper, divided
1 teaspoon salt, divided
1 1/2 cups buttermilk
1/2 inch vegetable oil for frying

Whisk together 1 tablespoon flour, 1/2 teaspoon salt, 1/2 teaspoon pepper, buttermilk and eggs in a small bowl. Stir remaining flour, salt and pepper together in a shallow bowl or plate. Dip tomato slices in buttermilk mixture, then dredge in flour mixture. Drop in heated oil. Fry each side about 2 1/2 minutes or until brown around the edges. Turn and brown other side. Drain on paper towels.

Serve right away — that is, if any is left!
