White Beans

White beans will give you gas big time, but they are so good.

1 pound dried white beans
water to cover beans
fist-size salt pork
1 1/2 teaspoon salt
1 teaspoon sugar

Pick through the removing dark or inferior beans and rocks. Place beans in a cooking pot, and cover with water an inch over the beans. (This helps remove gas!) Allow to sit overnight.

Drain beans and rinse. Add the same amount of clear water and salt pork. Allow beans to come to a boil, cut down heat and cook slow until soft. Add salt and sugar. Cook 30 minutes more.

Serve with hot buttered cornbread and, if you like, chopped onion.

Sometimes I’ll make meatloaf with white beans or maybe cooked cabbage or cole slaw. They’re so good, you really don’t need anything but buttered cornbread.
