Cornmeal Muffins

1 1/2 cups self-rising cornmeal
1/2 cup self-rising flour
2 tablespoons sugar
1 beaten egg
1 cup milk
1/4 cup cooking oil

Preheat oven to 450°.

Sift cornmeal, flour and sugar. Mix well. Add milk, beaten egg and oil. Mix thoroughly. Pour into muffin tins that have been sprayed with cooking spray. Cook for 15 minutes at 450° in a preheated oven.

These muffins are perfect with soup, chili and other autumn dishes — like butter!!
