Cream of Tomato Soup

There’s nothing better than a big bowl of steaming tomato soup on a cold, rainy day.

3 tablespoons butter
2 tablespoons plain flour
2 cups tomato juice
1/8 teaspoon soda
1 teaspoon salt
3 cups milk
1/2 teaspoon finely chopped onion (instant or powdered works)

In a heavy saucepan, melt butter, add flour. Stir. Add onion, tomato juice, soda and salt and cook slowly about five minutes, stirring constantly to mix flour into liquid. Add milk slowly and allow to become quite hot but not boiling. Serve.
