Hazel's Hot Dish Recipe of the Week


For New Year’s good luck.

4 bunches collards
water to cover collards
1/2 pound bacon
1/2 pound butter
pinch soda
1 1/2 teaspoon salt
1 teaspoon sugar

Wash collards three or four times. Remove defective leaves and large stems. Place collards in a large pot. Add soda. Bring to a boil. Cook about an hour until tender. Fry bacon and set aside. Drain collards. Place drained collards in fry pan with bacon grease. Stir to coat well. Add butter, salt and sugar. Continue cooking in the fry pan at least 15 minutes until all greens are well coated.

Serve New Year’s Day with fried cornbread and black-eyed peas.
