Broccoli Casserole

This is Jeremy’s favorite dish. When I first made this, I used Cheez Whiz. One day there was none on the shelf, so I substituted grated cheese, and Jeremy raved.

1 box chopped broccoli
1 onion
8 ounces grated cheese
1 can mushroom soup
3/4 stick butter
3/4 cup Minute Rice

Preheat oven to 400°.

Melt butter in a fry pan. Add onion. Stir in broccoli, soup and rice until well blended. Pour half of the mixed ingredients into a casserole dish. Add half the cheese. Layer remaining. Bake in a preheated 400° oven for 20 minutes. Easy and quick and good.
