Oatmeal Raisin Cookies
1 cup butter, softened
1 cup sugar
1 cup firmly packed light brown sugar
2 large eggs
1 tablespoon vanilla
2 cups plain flour, sifted
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups quick-cooking oatmeal
1 cup raisins
1 1/2 cups pecans, chopped
Preheat oven to 375°.
Beat butter until creamy. Add sugars, gradually beating. Add eggs and vanilla. Beat well.
Sift flour with soda, baking powder and salt, gradually add to butter mixture, beating well. Stir in oatmeal, raisins and chopped pecans.
Drop dough by heaping teaspoons onto greased cookie sheets. Bake at 375° for 8 minutes until lightly brown. Allow to cool slightly on cookie sheets. Move to wire racks until cool.
Makes at least 7 dozen good cookies.
