Coconut Pie

North Carolina boy, Jason Michael Carroll enjoyed this pie in my kitchen when we taped Southern Fried Flicks for CMT. Maybe you’ll like it, too.

5 eggs
3 cups sugar
4 tablespoons plain flour
1 1/2 cups evaporated milk
2 teaspoons vanilla
3/4 stick butter, melted
1 1/2 cups coconut

Preheat oven to 350°.

Beat eggs. Add sugar blended with flour. Add melted butter, milk and vanilla. Mix well. Stir in coconut. Pour into unbaked pie shells. Bake at 350° until set, about 30 minutes. Makes two pies.
