Hazel's Hot Dish Recipe of the Week

King Ranch Chicken
(George Strait’s recipe in my cookbook)

1 10 3/4-ounce can Cream of Chicken soup
1 10 3/4-ounce can Cream of Mushroom soup
3/4 cup chicken broth
1/2 10-ounce can Ro-Tel tomatoes with green chili peppers
4 chicken breast halves boiled, boned and skinless
1 6-ounce package corn tortillas, cut in 6 pieces
1 medium onion chopped
1/2 pound sharp shredded cheddar cheese

Preheat oven to 350°. Mix first 4 ingredients and set aside. Grease a 9 x 13 casserole, layer the ingredients in the following order: chicken, tortillas, onions, soup mixture. Top with cheese. Bake for one hour or until mixture is bubbly.
