Holiday Salad

2 3-ounce packages red gelatin
2 cups boiling water
1 cup cold pineapple juice
1 large can crushed pineapple, drained
1 8-ounce package cream cheese, softened
1 1/2 cups pecans, finely chopped
1/4 cup mayonnaise
1/4 pint cream, whipped

Mix gelatin with boiling water. Stir until well blended. Stir in cold pineapple juice. Refrigerate until congealed. Mix drained pineapple with soft cream cheese, pecans, mayonnaise and whipped cream. Spread over congealed layer.

Repeat the first step using same amount of gelatin, water and pineapple juice. Allow to begin to set before adding.

You can use different colors for different holidays — orange for Halloween and/or Thanksgiving, red for Memorial Day and Valentine’s Day.
