I cook these for New Year’s Day.
4 bunches collard greens
Water to cover greens
Pinch of soda
1/2 pound butter
1 stick butter
1 teaspoon salt
1 teaspoon sugar
Wash collards several times, remove defective leaves and large stems. Cover collards with water. Add pinch of soda. Boil until tender — about an hour. Fry bacon in a frying pan. Use a slotted spoon to remove collards from water into frying pan.
Add butter, salt and sugar. Cook until greens are coated with seasonings, maybe 30 minutes.
Boil some eggs, make some mashed potatoes, and bake a pone of cornbread. That’s all you need — except a steaming pot of black-eyed peas for good luck.
