Cheesy Peas and Asparagus ala Michael
2 cans baby peas, drained
2 cans asparagus, drained
4 eggs, boiled, peeled and sliced
1 stick butter
3 tablespoon flour
1 cup condensed milk
1 bag grated Velveeta cheese
1 stack Ritz crackers
Place drained asparagus and peas in an oblong casserole dish. Slice boiled eggs in half and place over peas. Melt 1/2 stick butter and add flour. Stir until it starts to brown. Add milk and stir until it thickens. Add Velveeta. Pour cheese mixture over vegetables. Put crushed crackers over cheese. Melt remaining 1/2 stick butter and pour over crackers.
