Japanese Fruit Pie

Tony Conway, who put the CMA Music Festival together, came to my house recently for CMT’s Southern Fried Flicks.  He really enjoyed this dessert. You will, too.

2 sticks butter
2 cups sugar
4 eggs
1 tablespoon vinegar
1 tablespoon vanilla
1 cup pecans
1 cup coconut
1 cup raisins
2 unbaked pie shells

Preheat oven to 350°.

Melt butter and add sugar, eggs, vinegar and vanilla. Beat well after each addition. Add raisins, coconut and pecans. Mix until well blended. Pour into 2 unbaked pie shells. Bake at 350° for 40 minutes.
