Fried Tenderloin Medallions

package pork tenderloins (there’s two loins in a package)

1 cup plain flour

2 t salt

1 t pepper

Slice both tenderloins about 1/8 inch thickness. Sprinkle each slice with a little salt. Add 1 t salt to cup of flour and place in a quart size plastic bag. Shake well to mix. Add 6 to 8 pieces of loin at a time; shake until coated. Repeat until depleted. Heat Crisco in a large fry pan until hot but not smoking. The meat is so tender, it takes only minutes until the meat is light brown and done; turn and allow to brown lightly. Serve.
