Trisha’s Homemade Chicken Salad

(When Trisha goes on the road she says she leaves a tub of this for hubby Garth Brooks)

6 medium skinless boneless chicken breasts

1/2 t salt

4 eggs, boiled, peeled and diced

1/2 cup sweet pickle relish

1 cup mayonnaise

salt and pepper to taste

Place the chicken in a pot with water to cover. Add salt and bring to a boil; reduce heat to a low simmer until chicken is tender, about 45 minutes. Drain chicken, cover and refrigerate until cool or overnight. Pull the chicken into shreds and place in a large bowl. Add eggs, relish and mayonnaise, gently stirring until well mixed. Season to taste with salt and pepper.
