Squash Casserole

I have tons of so-called squash casserole recipes, but I think this is the easiest and best.

3 large yellow squash, sliced
6 spring onions — tops and bottom chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon sugar
1/2 stick butter, melted

Cover squash, onions salt, pepper, sugar in a pot with water. Cook until fork tender. Drain and mash. Add melted butter. Mix well.

Preheat oven to 325°.

1 cup crumbs
1/2 cup milk
2 whole eggs, beaten

Mix crumbs with milk. Beat in eggs. Add to squash mixture and mix thoroughly. Place in a buttered casserole dish and bake at 325° until slightly brown.
