Fried Green Tomatoes
At my breakfast of Portland strawberries and milk, my mouth watered for fried green tomatoes.
3 or 4 large green tomatoes
½ cup flour
½ cup cornmeal
2 eggs, beaten
1 teaspoon salt½ teaspoon pepper
vegetable shortening for frying
Mix flour, cornmeal, salt and pepper in a medium bowl. Beat eggs in a separate bowl. Wash tomatoes and cut in ¼ inch slices. Sprinkle tomatoes with salt. Dip individual tomato slices in egg, then dredge in flour. Place tomatoes in heated (not smoking) fry pan in shortening. Cook until brown around the edges. Turn and brown the other side. Better if kept warm.
