Grated Sweet Potato Pudding

Grated Sweet Potato Pudding

2 eggs
1 cup sugar
1½ cups milk
¼ cup butter, melted
2 teaspoons vanilla
pinch salt
1 cup coconut
2 cups grated raw sweet potatoes

Preheat oven to 350°.

Beat eggs and sugar. Grate sweet potatoes into milk to prevent them from turning black. Mix all ingredients and turn into a buttered baking dish. Cook at 350° for 45 minutes or until it no longer jiggles.
