Old-Time Rice Pudding

When I started to school in the first grade, there were two ladies — Sally Smith and Della Wilkerson — cooking in the cafeteria. The one dish they made that I never forgot was rice pudding. All my life, I searched for a recipe where the rice cooked with the other ingredients like Mrs. Sally and Della made. This is it. Since the government gave rice to the school, we were served rice fairly often.

1/2 cup rice
4 cups milk
1/3 cup sugar
1/2 teaspoon salt
1 teaspoon lemon juice
1/4 teaspoon nutmeg
1/2 cup raisins

Preheat oven to 300°.

Combine rice, milk, sugar and salt. Pour into a greased 1½ quart baking dish. Bake at 300° for one hour, stirring several times. Add lemon, nutmeg and raisins. Bake for 2 – 2½ hours longer.
