Beef Macaroni and Cheese

1-pound box macaroni
2 tablespoons vegetable oil
1 cup green pepper
1 ½ cups finely chopped onions
1 tablespoon chopped garlic
2 pounds lean ground beef
3 cups crushed canned tomatoes
1 ½ teaspoons salt
1 teaspoon pepper
1 teaspoon each basil, cumin and oregano
3 cups grated sharp cheddar cheese

Preheat oven to 350°.

Cook macaroni according to package directions. Drain and set aside. Heat the oil in a skillet. Add green pepper, onions and garlic and sauté until soft. Add ground beef, cooking until done. FYI: I use a flat wooden spatula to separate the meat because I do not like big chunks. Add tomatoes, salt, pepper, basil, cumin and oregano. In a large bowl combine the macaroni and beef mixture. Spread the mixture in a 9 x 13 baking dish. Top with cheese and bake at 350° for 20 minutes or until the dish is bubbly.
