Mac ’n’ Meat ’n’ Cheese

One pound elbow macaroni
3 tablespoons vegetable oil
½ cup finely chopped green pepper
2 cups finely chopped onions
½ tablespoon garlic
2 pounds lean ground beef
1 large can crushed tomatoes
1 teaspoon salt
½ teaspoon pepper
1 teaspoon basil
1 teaspoon cumin
1 teaspoon oregano
3 cups grated sharp cheddar cheese

Cook macaroni according to package. Drain and set aside. Heat the oil in a fry pan and add peppers, onion and garlic. Sauté until soft. Add ground beef and cook until brown. Soak up grease from meat with paper towels. Add tomatoes, salt, pepper, basil, cumin and oregano. Combine macaroni and meat in a large bowl. Spread the mixture in a 9 x 13 casserole. Top with the cheese and bake for 20 minutes at 350°.
