Green Beans and New Potatoes

It’s that time of year.

2-2½ pounds of green beans
water to cover
non-smoked salt pork
1½ teaspoon salt
½ teaspoon sugar
2½ tablespoons butter
6 small red potatoes

Wash beans, snap off ends and break into 1½ inch pieces. Barely cover with water in a saucepan. Add non-smoked salt pork. Bring to a boil and cook beans covered on medium, checking every so often to be sure they aren’t sticking. Do not let the water boil dry. Add hot water if necessary but not too much water. After an hour of cooking, when the beans begin to come apart when you stir them, add 6 small whole red potatoes, washed and scrubbed carefully to get rid of all the dirt and grime. Add butter, salt and sugar. Cook 15 to 20 minutes until potatoes are fork tender and beans are dry but not scorched.
