Peaches and Cream Pie

Southern peaches are available right now.

¾ cup self-rising flour
1 (3½ ounce) package instant vanilla pudding
3 tablespoons butter
1 egg
½ cup milk

6 peaches peeled, washed and sliced
1 (8 ounce) package cream cheese
1½ cup sugar
1 tablespoon sugar
½ teaspoon cinnamon

Combine first five ingredients and mix at medium speed. Pour into a well-buttered deep dish pie plate. Cover peeled and sliced peaches with 1 cup sugar and 1 cup water. Bring to a boil and allow to cook 10 minutes. Pour peaches over first mixture. 

Mix ½ cup sugar with cream cheese and 3 tablespoons peach juice. Pour over peaches and mixture. Combine 1 tablespoon sugar and ½ teaspoon cinnamon. Sprinkle on top of pie. Bake at 350° for 35 minutes.
