HOT DISH RECIPES: Chicken Soup

Chicken Soup

1 whole chicken (2½ – 3 lbs.)
1 package frozen peas
3 carrots chopped
1 cup rice
1 large onion, chopped
½ teaspoon salt
½ teaspoon basil
¼ teaspoon pepper

Cover chicken in water, cook until tender. Remove skin and debone. Chop chicken into bite size pieces. Return chicken to broth. Add rice and chopped onions. Cook 10 minutes. Add carrots, peas and seasonings. Cook until tender.

Really good on a cold day.
