Chicken Parmigiana

Chicken Parmigiana

4 boneless chicken breasts
2 eggs, slightly beaten
1 teaspoon salt
1/2 teaspoon pepper
3/4 cup dry bread crumbs
1/2 cup cooking oil
1(15 oz.) can tomato sauce
1/2 teaspoon basil
1/2 teaspoon garlic powder
1 tablespoon butter
1/2 cup parmesan cheese
1 (8 oz.) pkg. mozzarella cheese

Mix salt and pepper with eggs. Dip chicken in this mixture, then roll in bread crumbs. Brown chicken in hot oil in a fry pan. Place in baking dish. Stir tomato sauce, basil and garlic in skillet, bring to a boil, lower heat and cook 10 minutes. Stir in butter. Pour over chicken breasts and sprinkle with parmesan cheese. Bake at 350° for 30 minutes. Remove from oven, place mozzarella in pieces over chicken and bake for an additional 10 minutes.
