Oven French Fries

4 medium potatoes
2 tablespoons vegetable oil

Preheat oven to 425°.

Peel potatoes and cut in strips about a ¼ inch wide. Dry on a paper towel. Toss potatoes in a bowl with the oil. When well-coated, spread in single layers on a cookie sheet. Cook in a 425° oven for 25 minutes. Turn periodically to brown all sides.
