Carrie Underwood has never kept her healthy eating a secret. She always talks openly about how she is a strict vegetarian, how she cooks for herself when she’s on the road and that she stays away from the temptations of catering and the even greater temptations of after-show food.
But breakfast? This is new news to me. That Underwood starts her healthy routine right when she wakes up in the morning.
And lucky for us, Erin Oprea, Underwood’s personal trainer and a health-food advisor, shared a couple of her best recipes and Underwood favorites for starting your day off right. Even if you have some dietary restrictions.
“Carrie is a vegan, so eggs are off the table. But she still finds delicious ways to incorporate fiber and protein into her first meal of the day,” Oprea writes in Parade magazine.
First up is what Oprea calls Carrie Underwood’s Vegan Deliciousness, which she says is not trademarked, but should be. It has tofu, red and green peppers, onions, seasonings and a multigrain English muffin. It’s no bowl of Cinnamon Toast Crunch, but it does sound pretty good.
Then there is Carrie’s Favorite No-Cook Oatmeal. Oprea says Underwood preps this the night before so it’s ready to go when she’s ready to break the fast. It’s basically a bowl full of old-fashioned oats, vanilla almond milk, diced apples and/or blueberries and/or strawberries, almonds, nutmeg and cinnamon.
It would be hard to have a bad day when you have a good morning like that.
