
Fried Corn
8 ears tender white corn
A little water (1/4-1/2 cup)
1/4 cup bacon drippings
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon sugar
Shuck and wash corn. Use a very sharp knife to cut the kernels off the cob, then scrape the cob clean. Heat bacon drippings. Add corn and remaining ingredients. Allow to come to a slow boil. Lower heat and cover. Cook 20 minutes, stirring and checking often to make sure it doesn't stick, burn or boil dry. You may add a little water or even milk, but only if it's necessary. This is sooooooo good, but don't mess with it too much.
