Banana Nut Bread
Hazel's Hot Dish Recipe of the Week
Overripe bananas work well with this recipe.

1/2 cup vegetable oil

1 cup sugar

2 eggs, beaten

3 bananas, mashed

2 cups sifted flour

1 teaspoon soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 tablespoon milk

1/2 teaspoon vanilla

1/2 cup pecans

Preheat oven to 350°.

Beat oil and sugar. Add eggs and bananas and beat well. Sift flour, soda, baking powder and salt. Add to first mixture with milk and vanilla. Beat well. Stir in pecans. Pour into a 9 x 5 inch greased and floured pan or two 7 1/2 x 4 inch pans. Bake at 350° for 45 minutes or until done.

This is great warmed for breakfast smeared with butter and/or soft cream cheese.
