Egg Sandwich


8 slices bacon

4 extra large eggs

sharp cheddar cheese, grated

8 slices bread

salt

pepper

butter

Fry bacon until crisp done. Drain on paper towels. Place two bacon slices on four bread slices. Break eggs. Add salt and pepper. Stir with a fork. Cook in a small heated fry pan with 1/4 tablespoon melted butter. Allow to cook around the edges then scrape the eggs to the middle of the pan. Cook until done, yet soft. Place 1/4 eggs on top of the bacon. Sprinkle hot eggs with grated cheese using at least a couple of tablespoons of cheddar and place a bread slice on top. Melt 1/2 tablespoon butter in a small fry pan. Allow to melt. Grill sandwiches until lightly toasted.
