Pumpkin Bread

Tis the season ...

4 eggs, well-beaten

1 cup oil

3 cups sugar

2 cups pumpkin

3 ½ cups plain flour

1 teaspoon salt

2 teaspoons soda

1 teaspoon cinnamon

1 teaspoon nutmeg

1 cup chopped pecans

1 cup chopped dates

Preheat oven to 350°.

Combine first four ingredients. Sift remaining ingredients together twice. Combine dry ingredients with pumpkin mixture, alternating with ¾ cup water. Beat until smooth. Add dates and pecans that have been coated with flour. Pour into four 1 pound loaf pans that have been greased and floured. Bake at 350° for 1 hour and 15 minutes.
