Collards

Collards are supposed to bring you money in the New Year.

4 bunches collards

water

1/2 pound bacon

1 stick butter

2 teaspoons salt

pinch soda

1 teaspoon sugar

Wash collards one leaf at a time to get rid of dirt and grit. Cut out stems and discard along with tough, discolored leaves. Place collards in a large pot of water. Add a pinch of soda (to rid the bitter taste). Bring to a boil. Reduce heat, allowing greens to boil slowly for an hour until tender.

Fry bacon. Remove bacon and set aside. Place greens in pan with bacon grease. Add salt, sugar and butter. You may need to chop collards in the pan if the leaves were big and tough. Turn greens to well-coat them with bacon grease and butter. Remove from pan and place in a large bowl. Crumble bacon over greens.

Serve with corn bread and black-eyed peas on New Year's Day for good luck and good health. Happy New Year -- and God bless you and yours.
