My grandson Jeremy and I made this cake for Christmas, and it was so good I told him I'd share it with the CMT.com folks well in advance of Valentine's Day.

Cake:
2 1/2 cups plain flour
1 1/2 cups sugar
1 1/2 cups vegetable oil
2 eggs
1 cup buttermilk
1 teaspoon vanilla
1 teaspoon baking soda
1 tablespoon cocoa
1 teaspoon vinegar
1-ounce bottle red food coloring

Preheat oven to 350. Grease and flour two 9 inch cake pans. Sift flour, sugar, soda and cocoa. Mix all ingredients in a large bowl and beat until smooth. Bake for 30 minutes.

Frosting:
1 1/2 boxes powdered sugar
12 oz cream cheese, room temperature
1 1/2 cups pecans chopped fine
1 1/2 sticks butter, room temperature
1 teaspoon vanilla

Blend all ingredients together except pecans. Beat with mixer until smooth and creamy. Stir in pecans. Spread between layers and over cake.
