
Hot Dish
Soak one pound dried red beans overnight. Rinse beans and pot, then return beans to pot. Cover with cold water adding fist-sized salt pork. Also add:
1 pound smoked sausage
1 chopped onion
2 chopped garlic cloves
2 stalks celery
1 bay leaf
2 teaspoons sugar
salt to taste (taste before adding)
Bring ingredients to a boil. Reduce heat and cook 1 ¾ hours, stirring frequently to prevent sticking. Add hot water if necessary to prevent sticking.
Serve over fluffy white rice.
