Drunken Chicken

3-3-1/2 pound fryer
olive oil
canned beverage

Coat chicken in olive oil, pepper and garlic. Place rack in cavity of chicken, stand chicken upright and slide in a half can of beer, 7-Up, Mountain Dew or Sprite. (I used Mountain Dew.) Cook in oven for a couple of hours at 325-350° until tender but not falling apart.

The chicken racks or holders are available at many discount and sporting goods stores.
