
Hot Dish
1 cup raw rice
2 tablespoons vegetable shortening
1 small onion, chopped fine
½ bell pepper, chopped
1 ½ teaspoons salt
2 teaspoons chili powder
1 10-ounce can tomatoes, chopped
2 cups water
Brown the rice in shortening in a frying pan. Add onion and green pepper. Stir. Add salt, chili powder and tomatoes. Add water. Pour into a saucepan, cover and simmer 30 minutes or until rice is tender and liquid is absorbed.
