Pinto Bean Casserole
I just know all my friends in high places will be cooking up this dish!
1 pound ground beef
1 15-ounce can pinto beans or 2 cups cooked beans if you have them
4 large potatoes, sliced and cooked
1 large onion, thinly sliced
1 teaspoon salt
1 10-ounce can tomato soup
1 green pepper, thinly sliced
Preheat oven to 350°.
Brown ground beef in fry pan, stirring until crumbly. Layer beans, cooked beef, cooked potatoes and sliced onions. Sprinkle salt over sliced onions. Pour tomato soup and water over all. Top with sliced green pepper. Cover and bake at 350° for one hour. Hey, New Yorkers!!
