Broccoli Sunshine Salad
2 bunches broccoli florets, cut in small pieces
1 large purple onion, chopped fine
1 cup golden raisins
1 cup sunflower seeds
1 pound bacon, fried crisp and crumbled
1/2 cup mayonnaise
1/3 cup sugar
1/3 cup vinegar
Mix mayonnaise, sugar and vinegar well. Combine first four ingredients with mayo mixture. Refrigerate overnight to marinate. Add crumbled bacon just before serving.
I think best to fry and crumble bacon day of serving. Fresh cooked bacon is best.
Will serve 8 or more.
