Roast Pork
5-6 pound pork loin roast
2 teaspoons salt
2 garlic cloves
1 teaspoon dried rosemary
1½ teaspoon oregano
1½ teaspoon thyme
1 ½ teaspoon sage
¼ teaspoon pepper
¼ teaspoon nutmeg
Preheat oven to 325°.
Rinse roast to help hold seasonings. Stir together the seasonings. Use a sharp knife to make several rows of ½ inch deep slits in the top of the loin. Press seasonings into the slits and rub remainder all over the loin. Place the loin in a roasting pan and pour ½ cup plum sauce over pork.
Cover with foil and bake 2½ hours. Uncover roast and baste with additional plum sauce. Bake 30 minutes longer, uncovered. Let meat rest 15 minutes before slicing. Tender good.
Plum Sauce
3 tablespoons butter
¾ cup onions
1 cup plum preserves (or jam)
2/3 cup water
½ cup brown sugar
1/3 cup chili sauce
¼ cup soy sauce
2 tablespoons mustard
3 drops pepper sauce
2 tablespoons fresh lemon juice
garlic salt to taste
Melt butter in a saucepan. Add onions and sauté until tender. Add remaining ingredients as listed. Bring to a boil, reduce heat to medium low and allow to simmer 15 minutes. Set aside.
