Brunswick Stew

My brother Henry makes this and invites the neighborhood -- then freezes the rest. It will feed a hundred. I love to be there when they make one. I love it.

6 hens
9 pounds boneless stew beef
2 ½ pounds salt pork (for seasoning)
13 quarts tomatoes
30 pounds potatoes
6 ½ quarts corn
2 ½ pound lima beans (dried)
8 pounds onions
1 ½ pounds butter
½ tablespoon sugar
3 teaspoons salt
black pepper to taste

Have meat cooked and deboned and skin removed from chicken. Soak lima beans overnight. Place items in large pot. Start on low heat. Peel and chop potatoes and onions. Add items to pot along with canned tomatoes. Add fat meat a piece at a time. Cook until tender and remove. Cook, stir and taste until veggies become stew -- 3-4 hours. Add corn and seasonings. Keep stirring and cook another hour. Total cooking time is probably five hours. Taste and stir. You can freeze. Makes my mouth water to think of this!
